What is a Hatch Chile? It is not a variety, but a chile pepper grown in the Hatch Valley Region of New Mexico. Some of the more well known varieties are NuMex 6-4 (mild), NuMex Big Jim (Medium), Sandia (Hot), and Lumbre (X-Hot). These Chiles, known for their unique flavor and aroma can range in heat level from mild to quite pungent! Their distinctive flavor is often described as grassy, fruity and smoky when flame roasted and peeled. Culinary uses range from Traditional New Mexican offerings (enchiladas, rellenos, sauces) to more modern treats like the Famous Green Chile Cheeseburger! Hatch Chiles are typically harvested from Mid-July into early fall making them a seasonal delicacy.
